Neville i dont think that they always die, fish which are shot like this might die since it was shot in it's stomach and it tore it open. But there are many time where fish are seen with shot wounds. That's something you can't always prevent i imagine no one would like to see a fish like that escape especially the shooter.

Had a few similar experiences myself 
It is always said to see a badly injured fish swim away knowing that it will die...but it is part of the game.
