For Sashimi:

Freezing is often used to kill parasites. According to European Union regulations,[4] freezing fish at −20°C (−4°F) for 24 hours kills parasites. The U.S. Food and Drug Administration (FDA) recommends freezing at −35°C (−31°F) for 15 hours, or at −20°C (−4°F) for 7 days

Most Western restuarants will not serve freshly caught tuna for sashimi but will blast freeze fresh tuna for a period of time that also aids with slicing it so thinly

The worst parasite problem is anisakis.  It lives in the intestines, but when it senses that the fish is dead it burrows into the fishes muscles.  So if you want extra fresh sashimi you need to fillet the fish while it is still alive, and DO NOT puncture the intestines.  Bon Appetito.

firstly, i'd get rid of the intestines as one whole thing inc the gills and head and rince the remaining in the sea. then i'd cut a line parrarrell to the middle bone to get rid of the blood and rinse well again........ then its filleting time........ first off with the tail and bones then place skin side down cut/slice/cube and eat...... having soy sauce/ginger/balsamic vinegar and lemons on board is an asset :-D

robby, A tip from a fellow friend of mine who had his liver removed due to anisakis old me to never eat crude fish without leaving it deep freeze for 4 days. The worst property of this parasite is that it resists heat of 45 degrees celcius if not mistaken (enters in hibernation and respawns afterwards). It can only be killed if freezed below twenty degrees celcius.

These worms/parasites are no joke robby. I wouldn't take the risk of introducing these parasites to anyone's body. while fresh fish tastes very well, there is too much of a risk without taking necessary precautions.
